Needing something to do to prevent cabin fever from being stuck in the house, I decided to make a homebrew. This is inspired by Ballast Point Brewing, who publish recipes for homebrewers which I think is great. It shows they really love brewing! . I also build a fermentation chamber to ferment at a consistent temperature and be able to cold crash, so this is the first attempt with my new equipment.
Ingredients
Malts
7 lbs Light LME
0.5 lb 10°L Crystal Malt
Hops
2 oz Warrior Hops (18.9% AA) - 0 minutes
2 oz Crystal Hops (3.5% AA) - 45 minutes
Yeast
2 packages WLP001 California Ale Yeast
Brewing Instructions
1. Heat 3.5 gallons of water to 145°F
2. Add 1 gallon of water to the fermenter
3. Add grains to the kettle, put on the lid, and turn off the heat
4. Steep grains for 20 minutes
5. Bring water to a boil and wait for the hot break
6. Add 2 oz Warrior hops
7. At 45 minutes, add 2 oz Crystal hops and turn off the heat
8. Move to the primary fermenter and cool to 68°F
9. Pitch yeast from yeast starter
10. At 1 week, rack to secondary
11. At 9 days, lower fermentation chamber to 40°F
12. At 1.5 weeks, keg beer at 30 PSI and 40°F
13. At 2 weeks, bottle beer using a beer gun
Starter & Notes
Boil 0.5 lbs cup DME in 2 L of solution for 10 minutes
Let cool to 75°F
Shake vigorously to aerate
Pitch 1 package WLP001
Let sit for 36 hours shaking occasionally
For this recipe, do this twice as there was left over yeast from a canceled brew day
