Ostentatious IPA Take Two

Straight up IPA. Looking to create a nice beer that can be a go to in my household and keep on tap. Inspiration for the hop profile was taken from Hop Valley Alpha Centari IPA, which is one of the best IPAs around.
Ingredients
Malts
13 lbs Two Row Malt (1.8 °L)
1 lb Vienna Malt (3 °L)
1 lb Crystal Malt (20 °L)
1.5 lb Corn Sugar
Hops
1 oz Nugget Hops (12.9% AA) - 0 minutes
1 oz Nugget Hops (12.9% AA) - 35 minutes
2 oz Centennial Hops (8.7% AA) - 35 minutes
2 oz Cascade Hops (5.6% AA) - 35 minutes
2 oz Simcoe Hops (11.0% AA) - dry hop
Yeast
1 package WLP041 Pacific Ale Yeast
Brewing Instructions
1. Heat 6 gallons of strike water to 163°F
2. Add 6 gallons of water to the mash tun
3. Add all grains to mash tun and confirm temperature of 151°F
4. Steep grains for 60 minutes
5. While steeping, heat 3 gallons of water to 170°F for lautering
6. Extract first runnings into boil kettle
7. Add additional 3 gallons water at 170°F to the mash tun
8. After 15 minutes, collect second runnings
9. Total wort volume should be ~7.0 gallons (7.0 actual)
10. Bring water to a boil and wait for the hot break
11. Add 1 oz Nugget hops
12. At 25 minutes, dissolve 1.5 lb Corn Sugar
13. At 25 minutes, add one tablet Whirlfloc
14. At 35 minutes, add 1 oz Nugget hops
15. At 35 minutes, add 2 oz Centennial hops
16. At 35 minutes, add 2 oz Cascade hops
17. At 40 minutes, chill the wort to approx. 68°F
18. Move to the primary fermenter
19. Pitch yeast from yeast starter
20. Ferment at 68°F
21. At 12 days, cold crash at 38°F
22. At 14 days, move to secondary fermenter and store at 65°F
23. At 14 days, dry hop with 2 oz Simcoe hops
24. At 17 days, lower temp to 40°F
25. At 19 days, keg
26. At 21 days, bottle
Starter & Notes
Boil 350 g DME in 3 L of water for 10 minutes
Let cool to 68°F
Shake vigorously to aerate
Pitch 1 package WLP041
Let sit for 36 hours shaking occasionally
