A beer to use up existing ingredients that I had and didn't want to waste. It will give me a chance to experiement with my yeast pitching rate and to trial the taste of Simcoe hops in a single hop beer.
Ingredients
Malts
10.5 lbs Extra Light LME
Hops
2 oz Simcoe Hops (10.2% AA) - 0 minutes
4 oz Simcoe Hops (10.2% AA) - 50 minutes
4 oz Simcoe Hops (10.2% AA) - dry hop
Yeast
2 packages WLP001 California Ale Yeast
Brewing Instructions
1. Add 6.25 gallons of water to the kettle
2. Bring water to a boil and wait for the hot break
3. Add 2 oz Simcoe hops
4. At 45 minutes, add one tablet Whirlfloc
5. At 50 minutes, add 4 oz Simcoe hops
6. At 60 minutes, chill the wort to approx. 68°F
7. Move to the primary fermenter
8. Pitch yeast from yeast starter
9. Ferment at 68°F
10. At 14 days, move to secondary and dry hop with 4 oz Simcoe hops
11. At 21 days, keg and carbonate to xxx vols
12. At 28 days, bottle
Starter & Notes
Boil 7.5 oz DME in 2 L of water for 10 minutes
Let cool to 68°F
Shake vigorously to aerate
Pitch 2 package WLP001
Let sit for 36 hours shaking occasionally
