West Coast Paleish
Pale Ale

A light pale. The goal of this beer is to make something drinkable with medium hop flavor and work on beer clarity. The recipe is based on the West Coast Pale Ale recipe found here: https://byo.com/newbrew/extract-with-grains
Ingredients
Malts
6.5 lbs Extra Light Liquid Malt Extract
0.5 lbs Crystal Malt (40° L)
Hops
3 oz Cascade Hops (5.5% AA) - 0 minutes
1 oz Cascade Hops (5.5% AA) - 45 minutes
2 oz Cascade Hops (5.5% AA) - 60 minutes
Yeast
1 package White Labs California Ale WLP001
Brewing Instructions
1. Add 3 gallons of water to the kettle
2. Add 3 gallons of water to the sanitized fermenter
3. Dissolve 3.5 lbs of LME in water
4. Heat wort to 160°F
5. Steep 0.5 lbs of Crystal malt for 20 minutes in steeping bag
6. Remove Crystal Malt
7. Bring water to a boil and look for Hot Break (when foaming stops)
8. Add 3 oz Cascade hops
9. At 45 minutes, add 1 oz Cascade hops
10. At 60 minutes, add 2 oz Cascade hops
11. Immediately remove heat and add remaining LME (~3.1 lbs)
12. After 15 minutes, chill the wort to 80°F
13. Add wort to primary fermenter with the 3 gallons of water
14. Let sit overnight to hit fermentation temperature (actual 78°F)
15. Take OG measurement
16. Aerate wort
17. Add yeast
18. At 1 week, rack beer to secondary
19. At 2 weeks, keg beer at 15 PSI and 40°F (5°C)
20. At 3 weeks, drop to 5 PSI and serve!
